Sushi verbergt niets. De naad van een maki, de glans op een stuk tonijn, de precieze hoek van een
snede — een macro-objectief brengt je niet zomaar dichterbij, het toont of elke kleine beslissing wel
klopte. Weinig gerechten straffen slordigheid, of belonen vakmanschap, zo zichtbaar als sushi onder
echte vergroting.
Maak kennis met David Lim. Hij kwam bijna dertig jaar geleden vanuit Maleisië naar Antwerpen, als
scheepsjongen. Sindsdien bouwde hij zijn naam op in de Antwerpse keukens, met onder meer zijn
eigen, door Gault&Millau erkende Ozzo, tot hij in 2017 The Village opende samen met zijn vrouw
Wendy en hun dochter — een keuken die al vier jaar op rij 13/20 haalt bij Gault&Millau. Op 24 oktober brengt hij die hand naar tafel, om te maken en te leren.
De fotografie wordt begeleid door Jeroen Hanselaer, zes jaar vaste fotograaf bij Culinaire Ambiance,
met redactioneel werk voor chefs als Peter Goossens en Nick Brill, en momenteel de fotograaf achter
Materia, verkozen tot 37ste beste Italiaanse restaurant ter wereld. Hij opent de sessie met zijn kijk op
eten als fotografisch onderwerp — geen stylingtrucs, maar wat een close-up echt vraagt aan licht,
oppervlak en terughoudendheid. Je maakt ook meteen kennis met de nieuwe Leica
APO-Macro-Elmarit-SL 100mm f/2.8.

Le sushi ne cache rien. La couture d'un maki, le reflet sur un morceau de thon, l'angle précis d'une
coupe — un objectif macro ne fait pas que rapprocher, il révèle si chacune de ces petites décisions a
été prise correctement. Peu de plats sanctionnent le manque de rigueur, ou récompensent la maîtrise,
aussi visiblement que le sushi sous un vrai grossissement.
Rencontrez David Lim. Il est arrivé à Anvers depuis la Malaisie il y a presque trente ans, comme
mousse sur un bateau. Il s'est fait un nom dans les cuisines de la ville, notamment avec son propre
restaurant Ozzo, reconnu par le Gault&Millau, avant d'ouvrir The Village en 2017 avec son épouse
Wendy et leur fille — une cuisine notée 13/20 quatre années de suite. Le 24 octobre, il apporte cette
main à table, pour faire et pour transmettre.
La photographie est guidée par Jeroen Hanselaer, six ans photographe attitré de Culinaire Ambiance,
avec des collaborations éditoriales pour des chefs comme Peter Goossens et Nick Brill, et actuellement
photographe de Materia, classé 37e meilleur restaurant italien au monde. Il ouvre la session avec sa
façon d'aborder la nourriture comme sujet photographique — pas des astuces de stylisme, mais ce
qu'un gros plan exige réellement en matière de lumière, de surface et de retenue. C'est aussi l'occasion
d'essayer le nouveau Leica APO-Macro-Elmarit-SL 100mm f/2.8.

Sushi hides nothing. The seam of a maki, the sheen on a piece of tuna, the precise angle of a cut — a
macro lens doesn't just get closer to a dish like this, it reveals whether every one of those small
decisions was made correctly. Few subjects punish sloppiness, or reward mastery, as visibly as sushi
does under real magnification.
Meet David Lim. He came to Antwerp from Malaysia almost thirty years ago, working as a ship's boy to
get here. He built his name in the city's kitchens from there, including his own Gault&Millau-recognised
Ozzo, before opening The Village in 2017 with his wife Wendy and their daughter — a kitchen that's
held 13/20 four years running. On 24 October, he brings that hand to the table, to make and to teach.
Guiding the photography is Jeroen Hanselaer, six years staff photographer for Culinaire Ambiance, with
editorial work for chefs including Peter Goossens and Nick Brill, and currently the photographer behind
Materia, ranked 37th best Italian restaurant in the world. He opens the session with his approach to food
as a photographic subject — not styling tricks, but what a close-up actually asks of light, of surface, of
restraint. It's also a chance to shoot with the new Leica APO-Macro-Elmarit-SL 100mm f/2.8.
